Recently I have seen a few people making grape juice in the most unusual way, but when you think about it, it's very clever. The concept is canning grapes in water, whole grapes, and letting the heat of the water and water bath processing extract the juice from the fruit. It's beautiful in the jar and as long as they are processed in a water bath for the correct amount of time they are safe. And who doesn't like grape juice!
Cristy shared her jars and wanted to make sure that I kept the recipe for at least a few people who don't have a steam juicer or the time to cook down the grapes and strain it to get the perfect consistency. You could also try this with cranberries or green grapes. The key is the longer you wait to open them the more full the flavor.
The recipe is so simple!! Here it is!
Grape Juice in a Jar (recipe is for each quart size jar)
1 cup seedless grapes (any variety)
1/4 cup white sugar
Fill hot jars with grapes and sugar. Add boiling hot water to fill to 1/2" headspace. Clean rims of jar with wet towel and add hot lids and ring. Place in water bath and process for 20 minutes at full rolling boil.
Remove jars and leave untouched for 12-24 hours till they are completely cooled. Check the lids to make sure they are sealed. Remove rings and leave them off. Clean jars with warm soapy water to remove any stickiness and store in pantry. Remember wait at least a month for the grapes to really infuse the water.
